Toasted Scones
Ingredients
2 cups all-purpose flour
¼ cup granulated sugar
1 tbsp baking powder
½ tsp salt
½ cup (1 stick) unsalted butter, cold and cubed
½ cup toasted chopped almonds (or pecans)
⅔ cup heavy cream (plus more for brushing)
1 tsp vanilla extract
Turbinado sugar for topping
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, sugar, baking powder, and salt.
Add cold butter and cut in with a pastry cutter or fingers until mixture resembles coarse crumbs.
Stir in toasted nuts.
In a small bowl, whisk cream and vanilla. Add to dry ingredients and stir until just combined—do not overmix.
Turn dough out onto a lightly floured surface. Pat into a 1-inch thick circle.
Cut into 8 wedges and transfer to baking sheet.
Brush tops with cream and sprinkle with turbinado sugar.
Bake 18–20 minutes or until golden brown. Cool slightly before serving.
